Moore BBQ Sauce

Ingredients:

  • 1 cup  Ketchup

  • 1/3 cup Red Wine Vinegar

  • ¾ cup cherry Dr. Pepper

  • ½ tsp Worstershire sauce

  • ½ tsp lemon juice

  • 1 tsp cayenne pepper

  • ½ tsp sea salt

  • 1 tsp Rosemary

  • 1 tsp garlic powder

  • ½ cup brown sugar

Instructions:

Mix all ingredients together in a large saucepan and simmer until thick.

Moore Lasagna
 

Sauce Ingredients:

  • 1 tbsp extra virgin olive oil

  • 2lbs – sweet Italian sausage

  • 2lbs – hamburger

  • 1lb – bacon

  • 2 tsp – Garlic Powder

  • ¼ cup + 2 tsp – Oregano

  • 2 tsp – Onion Powder

  • 8lbs – Tomato based Italian sauce of your choosing.  I used Prego meat flavored Italian sauce because it is my favorite.

  • 2 x 28 oz – can crushed tomatoes with basil

  • 1 cup – Brown Sugar

Ricotta Ingredients:

  • 30 oz Ricotta cheese

  • 2 beaten eggs

  • ½ cup grated parmesan cheese

  • 1 teaspoon salt

​

Lasagna Ingredients:

  • 1 – chopped and cooked Onion

  • Meat / sauce mixture (above)

  • Ricotta mixture (above)

  • 32 oz Mozzarella cheese

  • 1 cup cheddar cheese

Instructions: 

​

For the Sauce:

  1. Place a large skillet or saute pan over medium-high heat. Add a tablespoon or two of vegetable oil or extra virgin olive oil to the skillet.  When the pan is hot, add ground beef and Italian sausage.  Use a spatula or wooden spoon to break the ground beef & sausage up into smaller pieces as it cooks. Try to keep the pieces around the same size so it will cook and brown evenly. Continue to cook for about 6 minutes, or until the beef and sausage are no longer pink.  Add spices to the burger & sausage as they are cooking.

  2. Cook the bacon in a separate pan or skillet per package instructions. 

  3. Once hamburger, sausage and bacon are cooked, process the three meats through a meat grinder.

  4. In a large pan (metal or cast iron), add a tomato based Italian sauce of your choosing.

  5. Season combined meat with 1/4 cup oregano, 1/8 cup garlic powder, and 1/8 cup onion powder.  Mix until combined.

  6. Process the meat mixture through the meat grinder another time.

  7. Add meat mixture to large pan with tomato sauce. 

  8. Add 4lbs tomato based Italian sauce to the large pan with the meat & tomato sauce mixture.

  9. Add 2 x 28 oz can crushed tomatoes with basil to mixture.

  10. Add 1.5 cups brown sugar.

  11. Cook until warm and combined.

Yields 10 lbs sauce.

For the Ricotta:

  1. Mix all ingredients until combined.

​

For the Lasagna:

  1. Layer 1/3 of the lasagna noodles in the bottom of a 9x13 inch baking dish. Cover noodles with 1/2 ricotta mixture, 1/2 of the mozzarella cheese and 1/3 of the sauce. Add cooked onion on top of the sauce.  Repeat. Top with remaining noodles and sauce. Sprinkle additional Parmesan cheese and cheddar cheese over the top.

  2. Cook on the smoker for 30 minutes at 300 degrees F.

  3. Enjoy!
